Slow Cooker Honey Soy Chicken (Easy, Budget Recipe)
Slow cooker honey soy chicken is about as close to a “dump it in and forget it” dinner as Australian home cooking gets – a handful of pantry staples go in raw, and four or five hours later you’ve got tender, fall-apart chicken thighs coated in a sticky, glossy sauce, with almost none of the standing-over-the-stove effort a stir-fry version demands.

Why the sauce needs a separate thickening step
This is the one part of the method that trips people up the first time: the sauce comes out of the slow cooker thin, almost watery, even though everything you added was thick and syrupy going in. That’s normal, not a sign anything went wrong. Chicken releases a surprising amount of liquid as it cooks low and slow, and because a slow cooker is sealed under its lid, none of that liquid evaporates the way it would in an open pan on the stovetop – there’s simply nowhere for the extra moisture to go. Restaurant and stovetop honey soy sauces get their glossy, clingy texture by reducing over heat; a slow cooker can’t do that on its own. The fix is a two-minute cornflour slurry stirred in right at the end, which is what actually turns the thin cooking liquid into the sticky sauce the dish is known for – it’s a small extra step, but skipping it is the single biggest reason a homemade version turns out disappointing.
Ingredients (serves 4)
For the sauce
- 125ml (1/2 cup) soy sauce (reduced-salt if you can find it)
- 115g (1/3 cup) honey
- 4 cloves garlic, crushed
- 1 tbsp fresh ginger, finely grated
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1 tsp sesame oil
- 1/2 tsp chilli flakes (optional)
For the chicken
- 900g boneless, skinless chicken thighs, trimmed of excess fat
- 2 tbsp cornflour (cornstarch)
- 2 tbsp cold water
- 2 spring onions, sliced, to serve
- 1 tsp sesame seeds, to serve
- Steamed rice, to serve
Thighs, not breast, and always fully thawed
Method

- Whisk the soy sauce, honey, garlic, ginger, rice vinegar, sesame oil and chilli flakes (if using) together in a jug until the honey is fully dissolved.
- Place the chicken thighs in the slow cooker in as close to a single layer as you can manage. Pour the sauce over and turn the chicken to coat each piece.
- Cover and cook on low for 4-5 hours or high for 2-2.5 hours, until the chicken is cooked through and shreds easily with a fork (internal temperature of 75°C or above).
- Lift the chicken out onto a plate or board, leaving the sauce behind in the slow cooker.
- Whisk the cornflour and cold water together into a smooth, lump-free slurry. Stir it into the sauce in the slow cooker, cover, and cook on high for a further 10-15 minutes until the sauce turns glossy and thick enough to coat the back of a spoon. (For a faster result, tip the sauce into a small saucepan instead and simmer on the stovetop for 3-5 minutes.)
- Slice or roughly shred the chicken and return it to the thickened sauce, tossing to coat every piece.
- Serve over steamed rice, spooning extra sauce on top, and scatter with sliced spring onion and sesame seeds.

Cool leftovers to room temperature within 2 hours of cooking and refrigerate in an airtight container, following Food Standards Australia New Zealand‘s guidance on cooling and storing cooked food, and eat within 3-4 days. It also freezes well – portion the chicken and sauce together into a freezer-safe container or bag and freeze for up to 3 months, then thaw overnight in the fridge before reheating. Reheat gently in a covered pan on the stovetop with a small splash of water, or in the microwave in 30-second bursts, stirring in between, until piping hot all the way through.

Per serving (of 4), this works out to roughly 430 kcal, 38g protein, 13g fat, and 24g carbohydrate, most of the carbohydrate coming from the honey in the sauce.
